Most people will have no idea that these are vegan. The soft and fluffy apple-filled center, contrasting with the sweet crispy outside is a great blend of textures and flavors.

There are a few things you will need to make fried apple fritters on your cook-top at home:

1. Food thermometer – This is a handy kitchen tool that you’ll want for frying at optimal temperature. The oil needs to be hot enough, but not too hot: (350°F).

2. A large pot or skillet for frying. I like a deep pot when frying instead of a shallow skillet, so that there is a lot less splattered oil to clean up afterward!

3. Measuring cups and measuring spoons

Ingredients (Makes about 10 Fritters)

1-Cup All Purpose flour – Gluten-free flour is not recommended.

1-Cup Sparkling Water – Unflavored since we just need the carbonation along with the baking powder to make these fluffy.

1-Tbsp. Granulated sugar

½ -Tsp. Baking powder

1-Pinch of Salt

½ -Tsp. Ground cinnamon

¼-Tsp. Vanilla extract

2-Cups of thinly sliced Apples – (Depending on size, 1-2 apples). Use a crisp cooking apple, like granny smith or honey crisp.

Oil for frying – Make sure to use a neutral high smoke point oil for frying, like peanut, avocado, or canola oil. I use a shallow fry, so only about ½” depth in your pot or skillet.

2-Tbsp. Confectioners’ sugar – For dusting onto the fritters after cooked.
Cooking Instructions

1. In a large mixing bowl, add the flour, sugar, baking powder, salt and cinnamon. Stir gently to combine.

2. Next add the vanilla and half of the sparkling water to the bowl and mix until just combined, then add the rest of the water and continue mixing until you have a fairly thin and even batter consistency.

3. Add 2 cups of thinly sliced apples (sliced about 1/8” thick, and 1” in diameter. Fold them in carefully so that the apples are fully coated. I like a LOT of apples!

4. Heat ½” of oil (to 375℉) in a deep pot or skillet.

5. Scoop 1/3 cup of the fritter batter and carefully place it into the hot oil, spreading it out a bit right after it is in the oil. They will puff up as they cook, so don’t overcrowd your cooking area.

6. Cook your fritters for approximately 2 minutes (until golden brown on one side) and carefully turn them over and cook for another 2-3 minutes.

7. Place the fritters on a wire rack to cool and dust the tops with confectioners’ sugar.
